During the drying and distillation of the iris rhizomes, the main compounds responsible for the characteristic odor are formed:

Alpha-irone: Contributes to the floral and green notes.

Beta-irone: Adds powdery and soft nuances.

Gamma-irone: Offers fruity and slightly sweet profile.

After harvesting, the rhizomes have to be dried for an additional three years to allow the creation of the desired fragrance precursors.
